For the Marinara Sauce (for Ziti or Spaghetti):

  • 2 cups canned crushed tomatoes
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sugar (optional)
  • Salt and pepper, to taste
  • 1/4 cup fresh basil (optional, for garnish)

For the Chicken Parmigiana (optional, for added protein):

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese, shredded
  • Olive oil, for frying

Instructions

Make the Alfredo Sauce (for Fettuccine Alfredo):

  1. Melt Butter and Garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
  2. Add Cream and Cheese: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and continue to cook until the sauce thickens, about 3-4 minutes.
  3. Season the Sauce: Season with salt, pepper, and nutmeg (if using). Taste and adjust seasonings as needed.
  4. Toss Pasta in Sauce: Add the cooked pasta to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency.

Make the Marinara Sauce (for Ziti or Spaghetti):

  1. Sauté Onion and Garlic: In a skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional minute.
  2. Add Tomatoes and Herbs: Stir in the crushed tomatoes, tomato paste, basil, oregano, and sugar (if using). Simmer the sauce on low heat for 15 minutes, stirring occasionally, until thickened.
  3. Season the Sauce: Taste and season with salt and pepper as needed.
