Ingredients

Scale
  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tablespoon cornstarch (for coating)
  • 2 tablespoons vegetable oil (for frying)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 23 cloves garlic, minced
  • 1 small fresh chili (optional, for heat), sliced thinly
  • 23 sprigs green onions, sliced
  • 1 teaspoon sesame oil (optional, for extra flavor)

Ingredient Highlights

  • Shrimp: Shrimp are high in protein and low in fat, making them a lean, nutritious option for a meal. Their delicate texture pairs wonderfully with the crispy coating.
  • Cornstarch: A light dusting of cornstarch gives the shrimp a crispy exterior while keeping the inside tender.
  • Salt and Pepper: The basic seasoning that lets the shrimp shine. It’s simple yet flavorful.
  • Garlic and Chili: Fresh garlic adds aromatic depth, while chili provides a bit of heat (optional for those who prefer a spicier dish).

Instructions

Prepare the Shrimp:

  1. Prep the Shrimp: Pat the shrimp dry with paper towels to remove any excess moisture. This will help them sear better. Lightly coat the shrimp with cornstarch, shaking off any excess.
  2. Season the Shrimp: Season the shrimp with a pinch of salt and pepper. Set aside while you heat the oil.

Cook the Shrimp:

  1. Heat the Oil: Heat vegetable oil in a large skillet or wok over medium-high heat until it’s hot and shimmering.
  2. Fry the Shrimp: Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes on each side, or until the shrimp are golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
  3. Remove the Shrimp: Once the shrimp are crispy and cooked through, remove them from the skillet and set them aside on a plate.

Make the Seasoning:

  1. Sauté Garlic and Chili: In the same skillet, add a little more oil if needed and sauté the minced garlic and sliced chili (if using) for about 30 seconds, until fragrant.
  2. Season the Shrimp: Add the crispy shrimp back into the skillet with the garlic and chili. Toss to coat the shrimp in the garlic and chili mixture. Add more salt and pepper to taste, and drizzle with sesame oil (if using) for extra flavor.

Serve:

  1. Garnish and Serve: Transfer the shrimp to a serving platter and garnish with sliced green onions. Serve immediately.
