Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 8 oz fettuccine or your preferred pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Fresh parsley, chopped (for garnish)

Ingredient Highlights

  • Shrimp: Fresh, peeled, and deveined shrimp are key to this dish, offering a tender texture and sweet flavor that pairs perfectly with the Alfredo sauce.
  • Heavy Cream: The base of the Alfredo sauce, heavy cream gives the sauce its rich, smooth texture and luxurious flavor.
  • Parmesan Cheese: Freshly grated Parmesan adds a sharp, nutty flavor to the sauce, making it taste more authentic and adding depth.
  • Garlic: Minced garlic adds an aromatic, savory element that enhances the flavor of the sauce.
  • Butter & Olive Oil: A combination of butter and olive oil helps to cook the shrimp and create a rich base for the sauce.

Instructions

Cook the Pasta:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water for the sauce.

Cook the Shrimp:

  1. Cook the Shrimp: While the pasta is cooking, heat the olive oil and butter in a large skillet over medium-high heat. Once the butter has melted, add the shrimp to the pan.
  2. Sauté the Shrimp: Cook the shrimp for 2-3 minutes on each side, or until they turn pink and opaque. Season with salt, pepper, and red pepper flakes (if using). Remove the shrimp from the skillet and set aside.

Prepare the Alfredo Sauce:

  1. Make the Sauce: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Be careful not to burn the garlic.
  2. Add the Cream: Pour in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes, stirring occasionally, until the cream begins to thicken.
  3. Add the Cheese: Stir in the grated Parmesan cheese and continue stirring until the sauce becomes smooth and creamy. Add a bit of the reserved pasta water if the sauce becomes too thick.
  4. Season the Sauce: Taste the sauce and adjust the seasoning with additional salt and pepper if needed.

Combine and Serve:

  1. Combine Pasta and Shrimp: Add the cooked pasta to the Alfredo sauce, tossing to coat the pasta evenly. Add the shrimp back into the skillet and toss everything together gently.
  2. Garnish: Sprinkle with chopped fresh parsley for color and added flavor.
