Ingredients

Scale
  • 2 cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon unflavored gelatin (optional, for extra stability)
  • 1 tablespoon water (only if using gelatin)

Ingredient Highlights

  • Strawberries: Fresh, ripe strawberries provide natural sweetness and a vibrant color. You can also use frozen strawberries, but be sure to thaw and drain them first.
  • Heavy Whipping Cream: Whipped cream gives the mousse its light, airy texture and rich flavor.
  • Lemon Juice: Enhances the strawberry flavor and adds a slight tang to balance the sweetness.
  • Gelatin (Optional): Helps stabilize the mousse and keeps it from deflating over time.

Instructions

Prepare the Strawberry Puree:

  1. Blend the Strawberries: In a blender or food processor, blend the strawberries until smooth.
  2. Sweeten and Simmer: Transfer the puree to a small saucepan, add granulated sugar, and cook over medium heat for 3-5 minutes, stirring occasionally. This helps intensify the strawberry flavor.
  3. Add Lemon Juice: Stir in the lemon juice and let the mixture cool to room temperature.

Prepare the Mousse Base:

  1. (Optional) Bloom the Gelatin: If using gelatin, sprinkle it over 1 tablespoon of water in a small bowl and let it sit for a minute. Microwave for 5-10 seconds to dissolve. Stir into the cooled strawberry puree.
  2. Whip the Cream: In a large bowl, beat the cold heavy cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.

Combine and Chill:

  1. Fold the Strawberry Puree: Gently fold the cooled strawberry mixture into the whipped cream using a spatula. Be careful not to deflate the whipped cream.
  2. Transfer to Serving Glasses: Spoon or pipe the mousse into serving glasses or ramekins.
  3. Chill: Refrigerate for at least 1.5 hours to allow the mousse to set.
